Arugula

Arugula microgreens offer a bright, peppery lift with tender leaves and a crisp, fresh bite. Rich in vitamin C, vitamin K, folate and beneficial phytonutrients, they deliver both flavour and vitality in a compact form. Add them as a sharp garnish, scatter over flatbreads, fold into salads or blend into a lively green sauce for an instant surge of character.

Flavour Profile

  • Arugula microgreens carry a clean, assertive pepperiness right up front, the kind you feel on the tip of your tongue rather than the back of your throat.
  • The heat is quick and bright, never harsh, and it’s balanced by a fresh, green juiciness that keeps the flavour lively.
  • There’s a faint nuttiness underneath, plus a light herbal bitterness that adds structure without overwhelming the palate.
  • Compared to mature arugula, the microgreen version is more delicate, less bitter, and noticeably more vibrant, making it ideal for finishing dishes with a sharp, fresh lift.

Nutrition

Arugula microgreens are dense in micronutrients relative to their size. Key highlights:

  • Vitamin C: Supports immune function and collagen formation
  • Vitamin K: Essential for bone health and proper blood clotting
  • Folate (Vitamin B9): Important for cell growth and metabolic support
  • Calcium: Contributes to bone strength and muscle function
  • Potassium: Helps maintain healthy blood pressure and fluid balance
  • Carotenoids (incl. beta-carotene and lutein): Provide antioxidant support
  • Glucosinolates: Natural compounds with anti-inflammatory and potential anticancer properties

They’re low-calorie, high-fibre, and deliver a concentrated dose of phytonutrients compared to mature arugula leaves.

Usage & Plating

Arugula microgreens add instant lift wherever a dish needs brightness or contrast. Their sharp, peppery edge cuts through richness, wakes up mild flavours and adds a clean herbal note without weighing anything down.

Use them to finish eggs, pasta, risotto, grilled vegetables, seafood and poultry. Scatter over flatbreads or sandwiches for a lively bite, or fold gently into salads to sharpen the overall profile. They blend smoothly into pestos, herb oils and green sauces when you want flavour without bulk.

For plating, keep the portions small and intentional. Add them at the very end so the leaves stay crisp and upright. A loose pinch on top of a warm dish creates height; a small cluster beside a main adds structure; a thin line down a plate can frame the dish without stealing attention. Their deep green colour pairs especially well with pale, creamy or golden elements, giving you a clean visual pop along with that peppery spark.
