Usage & Plating
Foxy Pea microgreens add freshness and vibrancy to countless dishes. Toss them into salads with lemon vinaigrette, toasted almonds, and shaved parmesan for a bright, textural finish.
At brunch, they’re perfect layered over poached eggs with smoked salmon and a drizzle of hollandaise, adding both color and sweetness. In sandwiches and wraps, replace traditional lettuce with Foxy Peas to introduce a tender crunch and delicate flavor. They also make a beautiful garnish for soups—particularly pea or miso—providing visual contrast and a crisp element.
Finally, add them at the last moment to warm stir-fries, letting the heat gently wilt the shoots without cooking them, so they retain their freshness and vibrant green hue.
